Q1: there's a few sneak attack immune enemies in WotR, but not too many. in PF1E undead and demons are proper prone to sneak attacks. elementals and constructs are not too common in the campaign (but there are a few). Q2: Aeon is a bit more crowd control/support while Angel is more buff/heal in their abilities.Ember probably for the witch hexes which you're unlikely to have access to yourself where-as you're more likely to be able to heal/crowd control and even if you can't other characters can do it just (maybe) not as well as Daeran/Nenio.
